28 Years of Craft: The Woman Helping Shape Every Groot Constantia Vintage

For nearly three centuries, Groot Constantia has been synonymous with South African winemaking excellence. Every bottle produced on the historic estate carries a legacy that stretches back to 1685, but behind each vintage are the dedicated people whose skill, passion and commitment transform grapes into award-winning wines.

This Women’s Month, Groot Constantia is shining a spotlight on five remarkable women whose careers continue to shape the future of South Africa’s oldest wine-producing farm. Among them is Elizabeth George, a respected member of the estate’s winemaking team whose inspiring 28-year journey reflects the craftsmanship, resilience and lifelong learning that define one of the country’s most treasured heritage institutions.

From the Vineyard to the Cellar

Elizabeth George’s story began where every great wine begins—in the vineyard.

Starting her career among the vines, she embraced an opportunity to move into the cellar, where her determination to learn and her passion for winemaking quickly distinguished her among colleagues.

Nearly three decades later, she has become one of Groot Constantia’s most experienced and trusted cellar team members, working alongside several generations of winemakers while helping preserve the standards that have defined the estate for centuries.

“I’ve always loved working with wine,” Elizabeth says.

“Every vintage is different, and that’s what keeps it exciting. You’re always learning, always adapting, and with every season you leave a little part of yourself in the wine.”

Where Every Decision Shapes the Wine

Although vineyards often receive much of the attention, Elizabeth believes the cellar is where a wine truly develops its identity.

“People often say wine is made in the vineyard, and of course that’s where it starts,” she explains.

“But the cellar is where countless decisions shape the final wine. Every step matters, and every choice has an impact on what eventually ends up in the bottle.”

Those decisions require experience, patience and technical expertise—qualities Elizabeth has refined throughout her career.

Her knowledge has grown through years of specialist training in:

  • Winemaking
  • Wine evaluation
  • Aroma identification
  • Barrel management

Combined with decades of practical experience, her commitment to continuous learning has earned her a reputation as someone colleagues regularly seek out for guidance and advice.

“I’ve never been afraid to ask questions,” she says.

“You grow by learning from the people around you. There is always something new to discover, no matter how many years you’ve been doing the job.”

Harvest Remains the Highlight

Despite nearly three decades in the industry, Elizabeth’s enthusiasm has never faded.

Harvest season continues to be her favourite time of the year.

“There’s an incredible energy during harvest,” she says.

“Watching the grapes arrive from the vineyards and seeing the cellar come alive never gets old. It’s demanding work, but it’s also the most rewarding time of the year because you know you’re creating something special.”

It is during harvest that months of preparation come together, with every decision contributing to the character of the wines that will eventually reach consumers around the world.

Finding Purpose Through Winemaking

For Elizabeth, her work has become far more than a profession.

Following the loss of her husband, the routine, purpose and community she found within the cellar became an important source of strength.

“There are days when life feels heavy,” she says.

“But coming to the cellar changes that. Working with the wine, the aromas, the barrels and the people around me gives me purpose. It reminds me why I love what I do.”

Her story highlights not only technical excellence but also the personal resilience that often exists behind the scenes of South Africa’s wine industry.
