The Umami Effect: Why Sushi and Sparkling Wine Create Culinary Magic

The art of pairing sushi with sparkling wine is more than coincidence—it’s rooted in science. At the centre of this magic lies umami, the savoury “fifth taste” first identified in Japan in 1908. Umami, found in seafood, soy sauce, shiitake mushrooms, and fermented foods, acts as nature’s flavour enhancer, amplifying sweetness and saltiness.

Sushi is packed with umami: from the nori seaweed wrap to pristine seafood and soy sauce. At the same time, Method Cap Classique (MCC) sparkling wines contain subtle umami compounds. The wine’s rich fruit profile complements spicy and savoury sushi elements, while its effervescence and bright acidity cut through tempura and cream cheese, creating balance and freshness.

The House of BNG: A South African Success Story

Crafted in Stellenbosch, the BNG Brut Rosé is a masterful MCC blend of 40% Pinot Noir, 30% Chardonnay, 25% Pinotage, and 5% Pinot Meunier. Since its 2019 debut, The House of BNG has become a symbol of African celebration, featured at prestigious events such as President Cyril Ramaphosa’s inauguration and Miss SA.

Her leadership earned her the historic title of the first Black woman to join the Cap Classique Producers Association.
