Johannesburg’s dining scene has a new reason to gather around the table.
STOK’D has officially opened its doors at Omni Square Shopping Centre in Bassonia, bringing a new restaurant concept to the city built around charcoal cooking, generous food, music, atmosphere and the simple pleasure of sharing a meal.
The restaurant opened on 1 August 2026 and is the latest venture from internationally respected hospitality entrepreneur Bradley Michael, together with hospitality leader and shareholder Ernesto Ferreira.
And if the restaurant’s first weeks are anything to go by, STOK’D is already making its presence felt.
Where Charcoal Meets Culture
At the centre of STOK’D is a concept the team calls Charcoal Culture.
The approach is straightforward, but powerful: real charcoal, bold flavours, generous portions and food designed to be shared.
The menu puts charcoal chicken front and centre, prepared over real coals and served with a selection of mazza, sides and other dishes created for the table.
It is a style of dining that places as much emphasis on the experience of eating together as it does on what arrives on the plate.
For STOK’D, food is not meant to sit quietly in front of one person.
It is meant to land in the middle of the table.
It is meant to be passed around.
And it is meant to bring people together.
“STOK’D is about bringing people together,” says Bradley Michael. “It’s about the atmosphere, the music, the food landing in the middle of the table and that feeling you get when a restaurant has real energy. We wanted to create something that feels authentic, generous and full of life.”
A Personal Homecoming
For Michael, the opening carries significance beyond launching another restaurant.
STOK’D marks his return to South Africa after decades spent building internationally recognised restaurant brands across Australia, the Middle East and South Africa.
But this particular concept is also rooted in something much closer to home.
Inspired by his Lebanese heritage, South African food culture and his lifelong connection to cooking over charcoal, Michael has brought these influences together to create a restaurant concept intended to feel distinctly its own.
That combination gives STOK’D a clear identity: contemporary, energetic and deeply connected to the communal nature of food.
Rather than presenting charcoal cooking as a passing trend, the concept places it at the heart of the restaurant’s personality.
Hospitality Starts With How Guests Feel
Michael is joined in the venture by Ernesto Ferreira, shareholder in both Ribs & Burgers and STOK’D.
Ferreira brings extensive experience in hospitality leadership and restaurant operations to the venture, helping shape the culture and guest experience behind the new brand.
For him, a successful restaurant ultimately comes down to people.
“Restaurants are always about people first,” says Ferreira. “The food matters, the design matters, but ultimately, it’s about how people feel when they walk through the door. We want STOK’D to become a place where the community connects, celebrates, relaxes and keeps coming back to.”
That philosophy is reflected in the restaurant’s positioning.
STOK’D has been designed as a contemporary expression of Charcoal Culture, combining bold food with warm hospitality, music and a distinctive restaurant environment.
The result is intended to be relaxed without losing its energy — a place where the atmosphere forms part of the meal.
Johannesburg Has Already Taken Notice
Since opening, STOK’D has received a warm response from diners.
According to the team, early guests have responded enthusiastically to the food, generous portions, distinctive flavours and vibrant atmosphere, with particularly positive early reviews setting an encouraging tone for the restaurant’s first weeks.
For a new restaurant entering Johannesburg’s competitive dining landscape, that early response provides a promising start.
More importantly, it appears to reinforce the idea behind STOK’D from the beginning: create somewhere people genuinely want to spend time.
Some restaurants sell a meal.
STOK’D is positioning itself around something broader — the feeling of sitting around a table, sharing food, listening to music and being part of an atmosphere that has energy.
A New Table in Bassonia
With its doors now open, STOK’D is bringing its interpretation of Charcoal Culture to Omni Square Shopping Centre in Bassonia, Johannesburg.
The concept brings together Bradley Michael’s international hospitality experience, Ernesto Ferreira’s operational expertise and a food philosophy shaped by charcoal cooking, Lebanese heritage and South African food culture.
For Johannesburg diners, the invitation is simple: come hungry, bring people and experience it for yourself.
STOK’D is officially open — and the charcoal is burning.
